Asparagus and Mortadella Bundles with Spiced Cranberry Flavour Pearls
This recipe for Asparagus and Mortadella Bundles with Spiced Cranberry Flavour Pearls is deliciously quick to prepare and oh so yummy! It will look fabulous on the dinner table too.
We have featured Asparagus as they are in season right now but Green Beans would be a terrific substitute if unavailable. I adore Mortadella but if you’re after an alternative try Prosciutto or Jamon. Thinly sliced Ham, Rare Beef or Turkey would also be delish. Ribbons of char-grilled Zucchini or Egg Plant for our Vegan/non-meat eating friends. Our Spiced Cranberry Flavour Pearls are such a versatile flavour so substitute away 🙂
What you’ll need
- Asparagus – allow 4 – 6 spears per bundle
- Mortadella slices – 1 per portion
- 1/2 cup Pistachios – toast and chop
- Dressing – I used Kewpie Roasted Sesame Dressing from the supermarket – just use what you have handy
- Sea Salt and Pepper
- Spiced Cranberry Flavour Pearls
To do
Pop a large pot of Salted Water on the stove and bring to the boil. Have another pot or bowl with cold/ice Water ready to refresh the cooked Asparagus.
Using a sharp knife remove the woody ends of the Asparagus. Just line them up and cut together to keep them nice and consistent in length. Drop them into the boiling Water and blanch until brightly coloured and still a little firm to bite. Perhaps do a few at a time so you don’t accidently overcook! Then drop them straight into the iced Water to refresh and retain that beautiful colour. Drain them, ready for serving.
To serve
Simply grab 4 – 6 spears for each portion and lightly wrap/drape the Mortadella around the Asparagus. Place them directly onto your platter. Repeat until all wrapped. Drizzle a little dressing onto each bundle. Next sprinkle the chopped Pistachios then season with some Sea Salt flakes and freshly ground Pepper.
Finish with a spoonful of our Limited Edition Spiced Cranberry Flavour Pearls on each bundle and enjoy the festivities.
