Baked Prawns and Chorizo with Harissa Flavour Pearls

Baked Prawns and Chorizo with Harissa Flavour Pearls is a tasty Tapas inspired dish. Spicy Limited Edition Harissa Flavour Pearls add a little heat in all the right places 🌶️
We added some juicy tinned Cherry Tomatoes and Chickpeas for extra substance too. Yum!

What you’ll need – serves 4

  • Prawns, raw – allow 3 (aprox 250g) to 5 (aprox 450g) each (depending on entree or main)
  • Chorizo Sausage – 4 to 8 slices each (1/2 cm thick, aprox 24 per sausage)
  • 1 Spanish Onion – cut into wedges
  • Garlic 1 to 2 cloves – thinly sliced or crushed
  • Chilli – sliced (optional)
  • Smoked Paprika
  • Cumin & Coriander ground – a good pinch of each
  • Salt & Pepper
  • Olive Oil
  • Chickpeas – 1 tin, drain and rinse
  • 1 x Tin Cherry Tomatoes
  • Lemon – zest
  • Parsley – wash & chop
  • Harissa Flavour Pearls
  • 4 x oven proof dishes or 1 x larger share dish
  • Crusty Bread to serve

To do

Set your oven to 180c. Open the tinned Cherry Tomatoes and Chickpeas. Divide them between the 4 dishes equally.

Have your Spices, chopped Onion, Garlic & Chilli cut ready. Slice the Chorizo too. Depending on what you have purchased you will need to prepare the Prawns. I bought some whole Green Prawns from the Fish Shop. I removed the head and all of the shell except the tail. Next remove the poo line. I also cut a little deeper into them when cleaning the poop out to butterfly them. They look quite nice when cooked that way.

Next

Pop a large heavy frypan on the stove at a high heat. Add some Olive Oil, Spanish Onion and sliced Chorizo. We want to get a good colour on the Chorizo and Onion, add in the Chilli (if using). Add the Prawns next as well as the Cumin, Coriander and Paprika. Season all of them really well and just give a very quick fry up, barely cooking the Prawns more just adding the good flavours all over them. Now to divide this delicious mixture evenly between the dishes. Use a cake spatula to get all of the yumminess out of the bottom of the pan. You can have the dish ready to this point and set aside for baking later if you like.

To serve

Simply put the dishes into the Oven for around 10 minutes depending on how cool your dish was when it went in. You just need everything hot completely through and the Prawns to be fully cooked. When they are ready just pop the dish onto a plate (maybe a serviette under to stop it sliding) and add some crusty Bread on the side to mop up all the deliciousness. 

Sprinkle Lemon zest and Parsley on top and finish with a generous spoonful of our Limited Edition Harissa Flavour Pearls.
