Blueberry Coconut and Almond Granola

 

Crunchy and delicious. Home made Granola is very easy to make and the best bit about making your own is that YOU get to add the ingredients that you enjoy. I’m not a big fan of an overly sweet breakfast hence this recipe contains delicious Freeze Dried Blueberries, Almonds and Coconut. The addition of Olive oil and a little salt gives it a wonderful savoury edge. Essentially the only tricky part about making this is not burning the oats!   

What you’ll need…

  • 4 cups rolled oats (use certified gluten-free oats for gluten-free granola)
  • 1 cup Almonds (we used whole raw almonds – chopped up a bit) 
  • 3/4 tsp salt 
  • ½ tsp ground cinnamon
  • 1 tsp Vanilla – paste or essence
  • ½ cup olive oil (we used extra virgin) 
  • ½ cup  honey (or Maple syrup)
  • 1 cup Freeze Dried Blueberries
  • 1/2 to 3/4 cup coconut flakes

 

Lets get started

Pre-heat your oven to 180°C. Line a tray with some baking paper and set aside.

In a large mixing bowl, combine the oats, salt and cinnamon. Stir to blend.

Pour in the oil, honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.

Bake until lightly golden, about 20 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spoon to create a more even layer). The granola will further crisp up as it cools.

Let the granola cool completely, undisturbed (at least 45 minutes). Once it’s cooled, break it into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you prefer it a little finer. Add in your Freeze Dried Blueberries and Coconut. Feel free to add in additional fruits/nuts. Our Freeze Dried Raspberries or Mango or Strawberries would be nice.  

 

Ready to serve

I quite enjoy eating this with some natural yoghurt. Add milk if it makes you happy. Some fresh fruit would be delicious too. 

 

*You can store the granola in an airtight container at room temperature for 1 to 2 weeks.
