Bresaola with Rocket, Parmesan and Vincotto Flavour Pearls is a quick, healthy and delicious starter or share plate serving suggestion. This dish is fabulous if you’re short on time. 6 ingredients and simply just put them on a plate and you’re done.  
Bresaola is cured Beef (Italian origin) with a subtly spiced flavour. It’s nice and lean and deliciously salty. You will need to go to your local Deli and have them slice it for you. 6 thins slices per person is a nice amount for a starter. It goes beautifully with the rich Raisin flavour of the Vincotto Flavour Pearls. Our Balsamic or Pepperberry & Cherry Flavour Pearls would be a delicious alternative too.

What you’ll need 

  • Bresaola – allow 6 thin slices per person (from the Deli)
  • Rocket – small handful per person
  • Parmesan – around 6 nice shaved pieces per person 
  • Extra Virgin Olive Oil
  • Sea Salt & Black Pepper
  • Vincotto Flavour Pearls

To do

Once you have all of the ingredients on hand it’s a matter of just arranging them on your plate/s. Add more or less of any ingredient, it’s just a guide.

*Purchase a small wedge of Parmesan and use a Vegetable Peeler to shave the Cheese. Or you can simply buy a bag of shaved Parmesan from the Supermarket*

To serve

Simply lay the Bresaola slices onto each plate. Top with some Rocket leaves, then the Parmesan. Season with Sea Salt and Black Pepper. Add a nice drizzle of Extra Virgin Olive Oil and a good smattering of Vincotto Flavour Pearls to finish. I’d love some crusty Bread or rustic Garlic Pizza with this too.
