Caramelized Fennel with Goats Cheese and Native Bush Tomato Flavour Pearls

Fennel is a wonderful vegetable, fresh and crisp with a delicate anise flavour. With this recipe we are caramelizing them in a pan until they are tender and golden, their flavour becoming deep and rich. With the addition of wilted Spinach, Goats Cheese and Native Bush Tomato Flavour Pearls you can enjoy it as a stand alone meal or as a side dish for your feasting pleasure.

What you’ll need…

  • Butter
  • Extra Virgin Olive Oil
  • Raw Sugar – 2 tbs
  • Salt & Pepper
  • Fennel bulbs – 4 Smallish
  • Garlic – Crush 1 clove
  • Fennel seeds – 1 tsp
  • Goats Cheese – 1 small log
  • Lemon – zest
  • Spinach – a couple of goodhandfuls
  • Native Bush Tomato Flavour Pearls

Lets get started

Our first job is to prepare the Fennel. Cut the stems and fronds from the bulb.(you can use the feathery fronds as you would a herb for garnish or through your dish if you like) Tidy the root end by slicing a little off. Sit the fennel root side down on your chopping board and slice into aprox 1/2 cm slices. Watch this video if you’re unsure what I mean.

Next

I used a large roasting pan but a large frypan is great too. Put it straight onto the stove on a medium heat. Add around 1/3 cup of butter and a good splash of olive oil, the sugar, salt & pepper. Once the butter has melted add the sliced fennel in a single layer. Cook gently until it is becoming a little soft and golden (be sure to turn them throughout). 

Ready to serve

Put your washed Spinach leaves into a plastic bowl or jug, add a splash of Olive Oil and Salt & Pepper. Pop this into the microwave for a minute or so until it has wilted. (this can also be done in a hot pan)

If you’ve pre-cooked your Fennel ahead of time just return it to the pan now and gently warm it, adding the fennel seeds and garlic and all the lovely butter and juices. Once it’s warm add the fine Lemon zest.

Next job is to place it all on a plate, top with crumbled Goats Cheese and lastly finish with some Native Bush Tomato Flavour Pearls
