Chicken Skewers with Salsa and Golden Watermelon Flavour Pearls

There is just something about food on a stick that I really love. Add a fresh Watermelon Salsa, crisp lettuce leaf and some of our Limited Edition Golden Watermelon Flavour Pearls and we start ticking some warm weather entertaining boxes. 

We used chicken in our recipe but I’d also really love to try Halloumi or Sword fish served this way. Yum! The Salsa can be prepared ahead of time if you are bringing this to a BBQ too. 

What you’ll need…

  • Chicken – breast or boned thigh – plan for around 80g per skewer when you are shopping
  • Sumac – it’s a spice – yes you can buy it at the supermarket
  • Garlic – crush one clove
  • Salt & Pepper
  • Olive oil
  • Skewers
  • Baby Cos
  • Watermelon around 1 cup – diced finely
  • Cucumber around 1 cup – de-seed and diced finely
  • Capsicum around 1 cup – diced finely
  • Red onion 1/2 – diced finely
  • Coriander – Wash and chop 1/2 bunch (parsley or dill if you’re a coriander hater)
  • Lime Juice – a couple of tablespoons
  • Jalapenos – 1/4 cup (we kept ours whole so they can be picked out for those that don’t enjoy them)
  • Olive oil
  • Salt & Pepper
  • Golden Watermelon Flavour Pearls
  • BBQ or Grill Plate on the Stove

 

Lets get started

First lets get the chicken skewers sorted. Add a good splash of olive oil into a bowl with your crushed garlic and a teaspoon of Sumac. Cut the chicken into pieces and add to the marinade. Thread the marinated Chicken onto each skewer and refrigerate until required. (pre-soak wooden skewers for a charcoal grill to minimize them burning)

Next

Give the Cos lettuce a good wash and set aside until required.

For the Salsa, simply combine all diced ingredients with the jalapenos and add olive oil, lime juice, coriander and salt & pepper to taste. If you wish to add a little garlic just go easy as raw garlic is pretty potent!

Time to Cook

Get your BBQ or Grill Plate hot. You won’t need to oil the skewers as there is oil in the marinade.

Place them onto the Grill Plate. Season them well. They won’t take too long to cook. To be sure just take one off and cut into it with a knife to check. No one like undercooked chicken!

 

Ready to serve

Simply place your cooked skewers onto a platter with the Cos leaves and Salsa. Add a spoon to scoop the Salsa. Lastly give your Golden Watermelon Flavour Pearls a bit of a shake (the gold settles a bit in the bottom of the jar) and add them to your platter.
