These are just perfect for after a fabulous meal when serving a dessert is just too much but a sweet bite or two is just right. Our Limited Edition Golden Ruby Grapefruit Flavour Pearls add a touch of luxurious glamour and the sour flavour cuts beautifully through the rich chocolate.

What you’ll need… (around 20 truffles)

  • 60 ml  Cream
  • 150 g  Dark Chocolate – Chopped (Lindt 70% is quite nice and easy to work with)
  • 1 tbsp butter – soft
  • Cocoa Powder – to roll them in (I like the Callebaut brand if you can find it)
  • Golden Ruby Grapefruit Flavour Pearls

To do…

Heat the cream until it just comes to the boil. Add chopped chocolate and remove from heat. Let it sit for a few minutes then stir until the chocolate is completely melted.

Add in the soft butter and stir until smooth. This is also known as a ganache.

Put the mix into a bowl and cover with glad wrap. Makes sure the wrap sticks to the entire surface of the ganache.

Refrigerate overnight or until ganache is set.

Next…

To form the truffles, use a melon baller or teaspoon to get even scoops. Roll the ganache into a ball and place on greaseproof paper. This is super messy – you might want to pop them in the fridge for a bit to firm up again before you re-roll a little then roll finished truffles in unsweetened cocoa powder.

Ready to serve…

Find a pretty serving plate and simply make a bit of a tower with your Chocolate Truffles. If you make a little indent in a few of them it will make it a little easier to add your delicious garnish of Golden Ruby Grapefruit Flavour Pearls to finish. We have also added some Gold Leaf.
