Festive Mango and Avocado Salad with Spiced Cranberry Flavour Pearls

A colourful fresh Salad is a lovely addition to a family festive Christmas spread. Stunning Mango, luscious Avocado and shards of crisp Prosciutto topped with aromatic Spiced Cranberry Flavour Pearls and a drizzle of creamy herbed dressing. We’ve added some Macadamia nuts in for crunch too. Just perfect to enjoy with anything from a luxe Seafood spread to baked Ham and cold cuts or a backyard BBQ. Pop the Prosciutto on the side if you have non-meat eaters at your event.


What you’ll need 

  • 1 Mango – sliced
  • 1 Avocado – wedges
  • Prosciutto – 4 to 6 slices
  • 1/2 small Spanish Onion – fine slice
  • 1/4 cup Macadamias 
  • Mixed Lettuce leaves – a couple of handfulls
  • 1/2 cup of your favourite Mayonaise
  • 2 tablespoons fresh Dill chopped + extra sprigs for the salad
  • Spiced Cranberry Flavour Pearls

To do

Pre-heat your oven to 180c. 

Place a piece of baking paper onto a tray. Add the slices of Prosciutto. Top with another piece of baking paper and another tray. Pop this into the oven for 8 to 10 or so minutes to crisp. Take a peek at 8 minutes and see how it’s going. I like to use the double tray method as the Prosciutto stays nice and flat and doesn’t shrink too much. Allow it to cool on the tray. This can be done the day prior but is better done the same day. Maybe cook a bit extra to account for taste testing!

Next

Combine the Mayonaise, chopped Dill and lots of Salt & Pepper with a little water to thin it down to a dressing consistency. Set aside.

Place a generous layer of the mixed leaves onto your serving platter. Add the Mango slices, Avocado wedges, Dill sprigs and crisped Prosciutto (break them up a little first) nicely. Sprinkling on the Spanish Onion and Macadamias next. *If you are taking this somewhere or eating a little later just wrap it and finish the rest when you arrive*

To serve

To finish the dish drizzle the creamy herbed dressing on and lastly add a few good spoonfuls of Spiced Cranberry Flavour Pearls and enjoy.
