Grilled Salmon with Pickled Cucumber Salad and Cucumber & Wasabi Flavour Pearls

This recipe for Grilled Salmon with Pickled Cucumber Salad and Cucumber & Wasabi Flavour Pearls is going to end up a regular on your entertaining menu. It looks fabulous and it takes very little time to prepare so just ideal for a last minute catch up.

What you’ll need – this will feed 6 as a light meal

  • 3 Lebanese cucumbers     (the smaller cucumbers not the ones in plastic)
  • 3 – 4 radish
  • 60 ml rice vinegar
  • 5 ml sesame oil
  • ½ tsp  white sugar
  • ¼ tsp  sea salt
  • Black sesame seeds for garnish
  • Wasabi paste – to taste
  • 1/2 cup Mayonnaise
  • 6 Portions Salmon fillet – The supermarket portions are often large enough to cut into 2 pieces! (you could easily substitute for smoked salmon or trout slices or portions if you don’t want to cook fish)
  • Olive oil
  • Salt & Pepper
  • Cucumber & Wasabi Flavour Pearls

To do…

Trim the ends off the cucumbers. Cut them in half through the centre. Using a vegetable peeler, sharp knife or mandoline slicer, slice the cucumber lengthwise into thin ribbons. Place in medium bowl. Carefully slice the radish thinly and combine with the cucumber.

Mix together the vinegar, sesame oil, sugar and sea salt. Stir well to dissolve sugar.

Combine the mayonnaise and wasabi paste to your preferred heat…the Cucumber & Wasabi Flavour Pearls are not super hot so if you like a bit of extra heat go crazy here! 

Next you need to cook your Salmon. I tend to seal the skin in a pan until crispy and then pop it in the oven for a few minutes to finish but you can quite easily cook it through on the stove or BBQ if you like. Just make sure to oil and season your fish portions before cooking. Here is a clip on how to cook Salmon if you are after a few pointers. 

Just before serving, pour the dressing over the cucumber ribbons and toss gently.

Assembly time

Take a spoonful of your wasabi mayonnaise and swipe it across each plate. Divide the dressed cucumber salad between your plates. Sprinkle with a few black sesame seeds. Lastly place your Salmon portions on the plates and top with a generous spoonful of Cucumber & Wasabi Flavour Pearls.
