Honey Roast Berries with Ricotta and Balsamic Flavour Pearls
This recipe for Honey Roast Berries with Ricotta and Balsamic Flavour Pearls came about because the shop had incredible huge Blackberries and I just couldn’t walk on by without them!
It’s a great Brunch/Breakfast dish that’s a little different to the usual Eggs and such. A quick blast in the oven warms the Berries and gives a nice glaze with the Honey. Before piling them onto a slice of toasted Sourdough topped with some Olive Oil scented Ricotta. Mmmm yum! Adding Balsamic Flavour Pearls to complete the dish adds a wonderful tang to balance out the flavours.
What you’ll need – 2 serves
- 1 1/2 cups mixed Berries
- 2 slices Sour Dough
- 130g Smooth Ricotta Cheese
- Aprox 1 tablespoon Extra Virgin Olive Oil
- 1 Tablespoon Honey
- Thyme leaves
- Sea Salt & Black Pepper
- Balsamic Flavour Pearls
To do
Set your oven to 180c. Line a tray with Baking Paper.
De-hull/halve and tidy up your fruit then pop them into a bowl. Drizzle on the Honey and some Thyme leaves, adding a pinch of Salt and gently mix before spreading onto the tray. Add a little Olive Oil into the Ricotta and mix well. If your Ricotta is a little too soft for extra liquid just keep it plain, we will drizzle later anyway. (have it ready to this point before your guests arrive)
Next
Put the tray of Berries into the Oven (for around 10 minutes) and whilst that’s in brush the Sourdough with a little Olive Oil and grill in a fry pan until lightly browned.
To serve
Top both slices of warm toasted Sourdough with the Ricotta mix. Remove the Berries from the Oven and add a grind of Black Pepper and a little more fresh Thyme. Place the Sourdough onto the serving plates and top with the delicious warm Berries (use a lifter to put them on so they don’t squish). Make sure to drizzle on the juice too. Add a few drops of Extra Virgin Olive Oil and some Balsamic Flavour Pearls to finish the dish.
