Lemon Granita with Lime & Bitters Flavour Pearls

Is it dessert? Is it a palate cleanser? Or is it a cocktail just waiting for a splash of something? Ahhh that’s entirely up to you! This is super easy to make, you just need to allow a couple of hours freeze time and remember to mix it a few times.

What you’ll need

  • Lemon Syrup – Buy a good quality one or make you own (juice 4 lemons, 250ml water, 325g sugar – boil and set aside to cool)
  • Water
  • Lime & Bitters Flavour Pearls
  • Zest Lime and Lemons if you like but not 100% necessary
  • Glasses to serve

To do…

Combine some Lemon Syrup with cold water to taste. You want it to be quite strong as the flavour will be a little duller once frozen. Allow 150ml of mixed liquid per serve. Pour it into a shallow tray so that the liquid is only a couple of centimeters deep. It will freeze quicker this way.

Every half hourish take a fork or two and roughly break up the forming ice. Don’t mix it too finely, chunky bits are quite good. 

This can be prepared days in advance and just roughed up again before you serve it.

When it’s time to serve

Ensure that the glasses are chilled then simply add in some of your delicious frozen Lemon Granita. Add a few zesty bits and a spoonful of Lime and Bitters Flavour Pearls. (a little splash of Vodka or Gin would be nice too)
