Lime and Macadamia Tart with Native Finger Lime Flavour Pearls

Macadamia gives our delicious Lime Pies a delightful additional texture in the crumb base and combined with the garnish of Native Finger Lime Flavour Pearls adds another very Australian element to our dish.  

 Baking them in Patty Cases makes them an absolutely brilliant dish to transport too. A big tick for the busy entertaining season where we often need to bring something.

What you’ll need…makes 12

  • 12 each Marie Biscuits (or a similar type biscuit)
  • 80g Macadamia Nuts
  • 1 generous tablespoon of Brown Sugar
  • 1/2 teaspoon cinnamon
  • Butter, melted – about a 1/3 cup
  • 3 large Egg Whites
  • 1 tin Sweetened Condensed Milk
  • 1/2 to 3/4 cup Lime Juice
  • 1/3 cup Greek Yoghurt
  • Muffin tray
  • Plain cup cake paper cases
  • Native Finger Lime Flavour Pearls

Lets get started

Set your oven to 160c

Crush the biscuits for the base. If you have a food processor a quick blitz will do it. Otherwise pop them in a bag and use the base of a pot or rolling pin (this may dent a wooden pin). Roughly chop the Macadamias. Combine them with the Brown Sugar, Cinnamon and enough melted Butter to make it like damp sand so that it will stick together a little.

Next

Line the Muffin Tin with Paper Patty Cases and add a generous spoonful of damp crumb mix into each. Use the base of a glass to press the mix down evenly.

For the filling...Combine Egg Whites, Condensed Milk, Lime Juice and Yoghurt in a bowl. I just gave it a quick whisk but a hand mixer will do the trick too. Pour the mix into each Patty Case and bake for 10 to 12 minutes. You don’t want them to really colour but just firm up. You may wish to have your oven at a lower temperature. Cool them slightly in the tray before taking them out.

*these kept well in my fridge for 5 days…might last longer but ours were eaten before I could properly test it out!

Ready to serve

Simply peel off the paper case and top with a spoonful of Native Finger Lime Flavour Pearls to garnish.
