Mango and Raspberry Smoothie Bowl

This delicious Mango and Raspberry Smoothie Bowl is a simple dish to create and a fabulous way to enjoy fruit at it’s seasonal best.

We have added Freeze Dried Raspberry Powder and some Raspberry Flavour Pearls to give our smoothie bowl a really vibrant flavour and texture. Feel free to adapt your flavours according to what’s available at the time and of course what you enjoy eating. It’s a lovely addition to a brunch or just a delicious way to start the day.

What you’ll need…(adapt according to how much you need)

  • Mango – Fresh or frozen (or another fruit that you enjoy and purees well)
  • Coconut milk  or Yoghurt or Ice Cream or Frozen Yoghurt or Sorbet
  • Fresh Raspberries – a few per bowl
  • Coconut – shredded, flakes or desiccated is great
  • Freeze Dried Raspberry Powder
  • Raspberry Flavour Pearls

Lets get started

Select some small bowls or cute glassware and set them aside for later. (this will help with how much you need to make too)

You will need a stick blender or jug blender to make this. Simply chop your chosen fruit into bite sized pieces that the blender can manage and add in enough coconut milk or your chosen substitute and blend until smooth. If it’s too thick just add more coconut milk or even a little water until you get the desired consistency. I love the taste of coconut milk with the Mango 🙂

Next

If you have fresh Mango it’s nice to have some decorative slices or diced on top so get these ready now. We just sliced off the cheeks of the mango and using a large spoon scooped out the flesh in one piece. From here we simply thinly sliced the Mango and rolled it up. 

Ready to serve

Pour your smoothie into each dish/glass. Now simply just add the final ingredients to make it pretty. Pop on some fresh Raspberries, add a little Coconut and extra Mango. Lastly a generous sprinkle of Freeze Dried Raspberry Powder and spoonful of Raspberry Flavour Pearls. 

I really enjoy the addition of the Freeze Dried Raspberry in this dish. It’s super satisfying when you swirl it in with your spoon and the vibrant colour and flavour really shows.
