Passionfruit Mousse with Golden Pina Colada Flavour Pearls
Passionfruit Mousse with Golden Pina Colada Flavour Pearls is a delicious tropical dessert. Creamy with a balance of sweet yet tart flavours. The Coconut and Pineapple notes of the Golden Pina Colada Flavour Pearls add just the right glamourous garnish to finish the dish beautifully.
A dish that is quite simple to prepare too and can be made days in advance. We bought some cute glasses for ours but it’s the perfect opportunity to bring out some of the antique family heirloom dishes from the crystal cabinet.
What you’ll need – 4 portions
- 250ml Passionfruit pulp (seeds removed) – we used frozen pulp but fresh or tinned is fine
- 100g Sugar
- 2 tbs Water
- 10g Gelatine powder
- 45ml cold Water
- 250ml Thickened Cream
- 120ml Condensed Milk
- 4 x Serving glasses/bowls
Garnish
- Pineapple slices
- Mint sprigs
- Golden Pina Colada Flavour Pearls
To do
Combine the Gelatine powder with 45ml cold water. Give it a few minutes to fully hydrate. Pop the sieved Passionfruit pulp into a small saucepan with the 2tbs Water and 100g Sugar. Over a lowish heat dissolve the Sugar and slightly warm the mixture. Off the heat, add the hydrated Gelatine to the slightly warm Passionfruit mix stirring well. This will melt the Gelatine. Cool this mix to room temperature.
Next
In a medium to large mixing bowl, whip the Cream to firm peaks. Add the Condensed Milk. Fold the cooled Passionfruit mix into the whipped Cream mix. Spoon or pour the Mousse into serving Glasses and refrigerate for 3+ hours. We bought our cute Glasses from Kmart.
To serve
Simply remove the now chilled and set glasses of Mousse from the fridge. Add a slice of Pineapple, a sprig of mint and if you have any extra Passionfruit juice feel free to add a little on too then finish with a generous spoonful of our Limited Edition Golden Pina Colada Flavour Pearls. (Give the jar a good shake before spooning them out as the Gold shimmer in the liquid tends to settle on the bottom)
