Piklets with Salted Caramel Flavour Pearls

Lazy weekend mornings call for a treat. Our recipe for Pikelets (fluffy smaller pancakes) with Salted Caramel Flavour Pearls fits the bill just perfectly. A little sweet bite mid morning is just wonderful. There are few ingredients involved and you would often already have them in the house. It’s quick to prepare too which gets a big tick from me!

What you’ll need

  • 1 cup SR Flour (or 1 cup plain flour and 2 tsp baking powder) plus a little extra baking powder 1/2 tsp
  • 1 large egg
  • 1 tbs sugar
  • Milk – enough to make a thick batter
  • Icing Sugar for dusting (or not)
  • Maple Syrup (or custard if you prefer)
  • Salted Caramel Flavour Pearls

Let’s get started

Simply whisk together the Flour, Sugar, extra Baking Powder (to give it a little more lightness) and Egg with enough Milk to make a thick batter.

*You may find that you’ll need to add a splash more milk once it sits for a few minutes

Heat a non-stick pan or grill plate to a medium heat. (too hot and they will colour quickly and not cook properly in the middle). Give it a spray with some cooking spray and using a soup spoon add a generous spoonful onto the pan. If you just start with one to test the heat then you won’t accidently burn too many! Adjust the heat accordingly.

Once bubbles appear and start to pop it’s time to flip it over. It’s ready when golden on the other side too. Keep cooking until you have a plate full.

This mix will make around 15 pikelets.

To Serve

Simply pile up your delicious warm Pikelets on to serving plates and dust with a little Icing Sugar. Add a spoonful of Salted Caramel Flavour Pearls and a drizzle of Maple Syrup to finish.
