Pork Tonkatsu Skewers with Ponzu Flavour Pearls

  This recipe for Pork Tonkatsu with Ponzu Flavour Pearls is a terrific starter for your next gathering. We used a Pork fillet so we could easily slice nice small pieces to enjoy them canape style. Adding a squeeze of Kewpie Mayonnaise and some shredded Cabbage with our umami Ponzu Flavour Pearls tops it off beautifully.

 With a crispy outside and deliciously juicy centre, they will swiftly become a favourite. You could certainly just follow the general idea and use Chicken if you prefer. Something crumbed and tasty is always going to be enjoyed.

What you’ll need – serves 2 – 3

  • 1 x Pork fillet (aprox 400g)
  • 2 cups Panko Bread Crumbs – see note below
  • 1/2 cup Flour – season well
  • 1 Egg – whisk with a splash of milk or water
  • Oil for shallow frying
  • 1/4 or less Cabbage – finely shredded
  • Kewpie Sesame Dressing
  • Kewpie Mayonnaise
  • Black Sesame Seeds
  • Skewers or toothpicks
  • Ponzu Flavour Pearls

To do

Lets get the Pork crumbed first. Firstly trim off any sinew or fatty bits on the Pork. Coat the Pork fillet in seasoned Flour. Then dip into the Egg mix. Lastly coat with the Panko crumbs. Ensure an even coating. Set aside until you’re ready to cook. *crumbing can be done the day prior*

*a little trick with the dried Panko Crumbs that gives an even nicer result is to give the crumbs a light spray with some water. They rehydrate a little, just like fresh crumbs. I learnt this trick recently. It’s a goodie!*

Next

Set your oven to 180c. When you are ready to cook, pop a fry pan on the stove with enough Oil to shallow fry. Check that it is hot enough by adding a crumb and check that it sizzles. Gently add the crumbed Pork. Turning carefully until it is golden brown all over. It will still be undercooked in the centre, so lets finish it in the oven for 10 minutes or until the core temperature is 71c. (check with a thermometer) Let the meat sit for a few minutes before serving.

While the Pork is in the oven, using a mandolin or sharp knife shred the Cabbage super finely. Just before serving add a touch of Kewpie Sesame Dressing – not too much or it will all clag together and look ugly.

To serve

Using a nice sharp knife cut the Pork into pieces. Pop a skewer into each piece. Place them on your serving plate. Add a small squeeze of Kewpie Mayonnaise on the top of each portion. Then add some lightly dressed shaved Cabbage.

Sprinkle the Black Sesame Seeds on then top with some Ponzu Flavour Pearls.
