Here is a delicious canape recipe idea using Tangerine Pearls.

Lovely bite sized savoury piklets topped with avocado puree, fresh prawns and a citrus burst of Tangerine Flavour Pearls…ideal as a pre-dinner nibble or you could make them a little larger as an entree or light lunch.
Here’s what you will need….
Piklet mixture
- 225 g (1 1/2 cups) self-raising flour
- 250 ml (1 cup) milk
- 1 egg, lightly whisked
- 2 tablespoons chopped fresh chives (or other soft herb)
- Salt & pepper to taste
Sift the flour into a large bowl. Make a well in the center. Add the egg and milk to the flour, whisking constantly until a smooth batter forms. Stir in the chives and season. Cover and place in the fridge for 30 minutes to rest whilst you get the rest of the recipe ingredients together.
To cook….Heat a large non-stick frying pan over medium heat. Grease with melted butter. Drop teaspoonful quantities of batter onto the pan, allowing room for spreading. Cook for 2-3 minutes or until bubbles appear on the surface and pikelets are golden underneath. Turn. Cook for a further 1-2 minutes or until golden. Set aside until ready to top. (these can be cooked hours in advance)
Avocado mixture
- 1 large ripe avocado
- Squeeze of lemon or lime juice
- Salt & pepper to taste
Simply puree the avocado with the juice and salt and pepper and set aside until ready to use. (be sure to place it in a small bowl with cling wrap pressed to the top of the mix to minimize the avocado going brown)
Prawn mixture
- 500 g cooked prawns
- Creme fraiche – around 1/2 cup (or a good quality mayonnaise if you prefer)
- A little of the zest from your lemon or lime – finely grated or microplane
- Dill (fresh) – around 2 tablespoons, chopped
- Salt & pepper to taste
Chop or slice the prawns, add all other ingredients and combine well. Refrigerate until ready to assemble.
To assemble
- Tangerine Flavour Pearls – 1 x 50 g jar
Place your piklets onto a serving platter. Top each piklet with a small amount of avocado puree and a spoonful of prawn mixture.
Finish with around 3 Tangerine Flavour Pearls on top of each piklet and a little extra dill if desired and enjoy!
