Rare Beef with Yuzu Flavour Pearls and Salad
Are you looking for a light yet oh so tasty dish for your next gathering? Rare Beef with Yuzu Flavour Pearls and Salad could be just the dish! Lightly seared Eye Fillet has been sliced very thinly and drizzled with a delicious Sesame/Soy dressing. A simple salad of baby Chats, Sugar Snaps, Cucumber & Rocket leaves on the side and a generous spoonful of our Yuzu Flavour Pearls to add a stunning citrus zing. Yum! You could certainly swap out the Rare Beef for something else if you like too, it’s just a refreshing salad serving suggestion that looks pretty too. PS: the Soy dressing is awesome, I now keep a jar ready made in my fridge to enjoy regularly.
What you’ll need – 4 serves
- Eye Fillet, aprox 300g – a nice centre cut piece (Aldi have nice small portions or ask your Butcher)
- Sesame oil – for the Beef
- Salt & Pepper
- Baby Chat Potatoes – 2 or 3 per serve
- Baby Cucumbers – 6 cut into 1/4 lengthways
- Sugar snaps – aprox 100g
- Rocket – washed a small handful each
- 3 tablespoons Soy sauce
- 2 tablespoons Sugar
- 2 tablespoons Sesame Oil
- 2 teaspoons Vinegar (or to taste)
- Yuzu Flavour Pearls
To do
Heat a fry-pan or grill plate until super hot. While it’s heating up, rub the Eye Fillet with Sesame Oil all over and season well. Add the Eye Fillet to the pan, searing all sides of the meat for a minute or so each side. Remove from the heat and once it’s cooled a little then wrap it tighly with Glad Wrap, rolling it up multiple times so that it’s a nice tight roll. The link shows you how to do this but make sure you cook your Beef before you roll it up. This will make for nicer shaped slices. Pop the rolled Beef into the freezer to firm up (makes slicing it thinly much easier)
Next
Place your Chat Potatoes into a small pot with salted water and cook until tender. Cool them to room temperature before cutting into 1/2 or 1/4’s depending on their size. Drop the Sugar Snaps into a boiling pot of salted water to quickly blanch them. Once they are a nice bright green colour, remove them from the pot and refresh them in some cold water. You can place the Potatoes, Sugar Snaps, cut baby Cucumbers and lastly Rocket into a bowl ready for plating up. Just gladwrap it and pop it into the fridge like this until required. (feel free to change the salad ingredients too, this is what I had in the fridge on the day)
Into a small jar add the Soy, Sugar, Sesame Oil, and Vinegar and give it a good shake to combine.
To serve
Place 4 serving plates onto your bench. Remove the Beef from the freezer. It should be semi-frozen and firm but not frozen solid by now. Remove the gladwrap and using a sharp knife cut very thin slices of Beef and place them directly onto each plate. If you don’t wish to serve immediately just cover each plate with gladwrap sticking it straight onto the sliced Beef so that it doesn’t dis-colour. If you got side-tracked and it’s frozen solid just let it defrost a little so that you are able to slice it.
Add a small splash of the dressing and salt and pepper into the bowl of Salad ingredients and gently mix. Add a handful of the Salad onto each plate, trying to get an even spread of the good bits on each. Add a good drizzle of the Soy dressing onto the Beef. And finish the dish with a spoonful of Yuzu Flavour Pearls.
