
Raspberry Posset with Gold Calamansi Flavour Pearls & Raspberry Flavour Finisher

Tangy and creamy with a divine velvety texture requiring very little fuss to prepare. These delicious treats are made with Cream as the main ingredient, flavoured with fresh Raspberry and thickened with Lemon juice to make them set. A fabulous excuse to get out some fancy glassware! And they can be ready in the fridge a day or so before your event, ready to be quickly garnished and enjoyed. They would be a wonderful New Years Eve dessert. The fabulous texture of the Raspberry Flavour Finisher with the bursting zingy Golden Calamansi Flavour Pearls add the perfect contrast to the luxurious smooth Posset.
What you’ll need – serves 4
- 2 cups Thickened Cream
- 1/2 cup Sugar
- pinch salt
- 1 tablespoon Lemon zest
- 2 tablespoons Lemon juice
- 2 cups Raspberries – frozen or fresh is ok
To serve
- Golden Calamansi Flavour Pearls
- Raspberry Flavour Finisher
- 4 tablespoons Cream – whipped with a little Sugar or Double Cream
- 4 glasses/bowls/tea cups to serve
To do
Combine the Cream, Sugar, Salt and Lemon zest in a medium saucepan. Heat to a gentle simmer for a good 5 minutes, stirring occasionally. Add in the Raspberries, squishing them up a bit with the spoon and cook for another 5 minutes. It will start to appear a touch thicker.
Next
Pour the hot creamy Raspberry mix through a sieve into a jug, pushing the Raspberries through with a spatula to get all of the flavour. Add in the Lemon juice and give it a stir. Pour the Posset mixture into your chosen servingware, cover with gladwrap to prevent the tops drying out and refrigerate for at least a couple of hours to set. *I used some cute glasses that I found at the Op Shop*
To serve
To present simply add a spoonful of Cream, a sprinkle of Raspberry Flavour Finisher and some Golden Calamansi Flavour Pearls and enjoy.
