Raspberry & White Chocolate Blondies
Oh yum, you are definitely going to enjoy this recipe! Raspberry & White Chocolate Blondies are a regular bake at our place these days. Fabulously quick to prepare and all done by hand too, no mixer required. Our Freeze Dried Raspberries add such a vibrant flavour which is just stunning with the White Chocolate and Coconut. They keep really well too…well that is if there’s any left!
*What is a blondie? A blondie is pretty much the blonde version of a brownie. It’s the vanilla to brownie’s chocolate! The main difference between a brownie and a blondie is that instead of cocoa powder, there is just vanilla and brown sugar.
What you’ll need…
- 150 gm Butter – Melt
- 150 gm Brown Sugar
- 100 gm Sugar
- 2 Eggs
- 1 tsp Vanilla
- 200 gm Flour
- ½ tsp Baking Powder
- ½ cup Freeze Dried Raspberries
- ½ cup White Chocolate Bits or Chopped Block
- ½ cup Coconut
- Tin – approx. 20 cm x 20 cm
Lets get started
Ready to serve
Simply cut your cooled Blondie into portions. Dust generously with icing sugar and enjoy. Gorgeous with a big dollop of Double Cream because why not!
*This can be stored in an airtight container for up to a week….if it lasts that long!
