Seared Scallops with Green Salsa and Golden Ruby Grapefruit Flavour Pearls

Enjoy this dish of seared scallops as a starter or canapé. Seared scallops are easy to prepare and absolutely delicious. Golden Ruby Grapefruit Flavour Pearls add a glamorous fruity burst to each bite. I’d love the Ginger, Lime & Chilli Flavour Pearls as an alternative too. Our salsa is super simple to make. This could be a fancy BBQ recipe, there’s no need to be locked away in the kitchen to cook!

What you’ll need…

  • Scallops – allow 1 – 3 per person
  • Salt and Pepper
  • Olive oil
  • A little butter
  • Avocado – ripe yet firm
  • Cucumber 
  • Spanish onion or Shallot
  • Coriander or herb of your choice
  • Lime
  • Golden Ruby Grapefruit Flavour Pearls

Lets get started…

Firstly, let’s get the salsa ready.
We are going to dice the cucumber, small dice or brunoise. Here is a video link that will show you how to brunoise. It’s not difficult but taking care with your precision cuts will make for better presentation.

Next to finely dice the avocado. Carefully cut it in half, remove the seed and using a spoon scoop the flesh out in one piece or peel the skin off. You will need an equal amount of diced avocado to cucumber. Be gentle!

Then finely dice your Spanish onion or shallot. You don’t need a lot of this, lets say that the cucumber and avocado dice is around a cup full. I would like to add about a tablespoon of onion or shallot. Too much will over power the flavour.

Season well with salt and pepper. Add a squeeze of lime juice and a splash of olive oil. Lastly chiffonade or finely slice your herb of choice. Using a spoon very carefully combine everything and set it aside.

You can prepare this hours in advance, just add the avocado last minute.

Next…

We purchased our scallops from our local fishmonger and they were fresh and clean with no abductor muscle attached. If you see/feel a small firmer bit attached to one side of your scallop, simply slice it off using a sharp knife. It will be unpleasant to eat otherwise.

Pop them onto a plate or tray and drizzle with olive oil and season them well just before you wish to cook them.

Get your fry pan or bbq nice and hot. Add a splash of olive oil and knob of butter, add the scallops.  Sear the scallops until golden and almost cooked through

Ready to serve

.

Simply spoon some salsa onto each plate or dish, a spoon per scallop. Add your cooked scallops and lastly top with some Golden Ruby Grapefruit Flavour Pearls

Now pop the cork on your bubbles and enjoy…
