
Spice Rubbed Chicken Skewers with Tasty Rice & Sherry Vinegar Flavour Pearls
Meat on a stick is always a winner! A big tick for some BBQ cooking while the weather is nice. Spice Rubbed Chicken Skewers with Tasty Rice & Sherry Vinegar Flavour Pearls is perfect for some easy entertaining.
Rice is a nice side for a change. This is essentially a Rice Pilaf that I’ve added a packet of Taco Seasoning for extra yum. Chipotle Powder in the Chicken Marinade adds a little spice 🌶️ but if you prefer no spice please substitute for some Smoked Paprika. The Tang of our Limited Edition Sherry Vinegar Flavour Pearls tie the flavours in beautifully and gives a luxe look too 😍
What you’ll need – serves 4
- Chicken Thigh (skinless) – allow aprox 150g per person, diced
- Wooden or Metal Skewers – 3 per person
- Garlic – 1 clove minced
- Lemon Zest – 1/2 Lemon
- Olive oil – good splash
- Cumin powder 1 tsp
- Coriander Seeds – toast & crush – 1 tbs
- 1/2 tsp Chipotle Powder (spicy) OR 1 tsp Smoked Papika
- 1/2 tsp Chicken or Vegetable stock Powder
- 1 tsp Oregano or Thyme (dried is fine if you have it)
- Onion – 1 medium, diced
- 3 cups Vegetable or Chicken Stock OR Stock Powder + Water
- Basmatti Rice – 2 cups
- Taco Seasoning – 1 Pkt
- Butter – 1 tsp
- Sour Cream
- Coriander – Fresh leaves, wash well

To do
Let’s marinate the diced Chicken first. Into a bowl add a good lug of Olive Oil, Garlic, Lemon Zest, Cumin, Coriander, Chipotle/Paprika, Stock Powder and dried Oregano or Thyme. Give it a good mix and add in the Chicken. Once the Chicken is well coated you can thread the meat onto skewers. Just cover and pop them into the fridge until they are needed later or the next day.

The Rice will take aound 20 minutes to prepare. Add a splash of Olive Oil into a small saucepan. Add the diced Onion and cook over a medium heat until slightly browning and super fragrant. Add a couple of Bay leaves if you have any handy too. I like to season well at this stage. Now we need to add this to the 2 cups of Rice, 3 cups of Stock and packet of Taco Seasoning and cook in your usual way. At home I just pop all the ingredients into a large Microwave safe container (uncovered) and cook in the Microwave for 10 minutes then stir, then a further 5 to 10 until all of the liquid is absorbed and the Rice is tender. Or pop it all into a Rice cooker. Or take a look at this how to link for stove top absorption. Once the Rice is cooked, fluff it up with a fork and add in the Butter. Pop on a lid and let it steam out for a bit until required later or to reheat another day.
To serve
Heat up the BBQ or Pan for the Chicken. Simply pop the skewers on and cook until they are done. Always just cut one open if you are unsure. Warm up the Rice if it needs it. Once both items are cooked and hot to eat simply add a good spoonful of Rice onto each plate, add 3 Chicken Skewers. Top with some Sour Cream, a few nice sprigs of Coriander then finish with some Limited Edition Sherry Vinegar Flavour Pearls. Enjoy!
