Squid with Ginger & Pink Peppercorn Flavour Pearls Ruby Grapefruit and Mint

Fresh Squid, simply pan-fried and served with Ruby Grapefruit and Mint. Our New Limited Edition Ginger & Pink Peppercorn Flavour Pearls add gorgeous zingy bursts to the fruity freshness. A stunningly simple dish to prepare – just ask your fishmonger to clean the Squid if it’s beyond you.

What You’ll Need (serves 4)

 

Lets Get Started

Cleaning the Squid is a good place to begin. This can be done hours in advance. I simply separated the hood from the legs, cleaned out the inside. Trimmed the legs just just below the head and removed the filmy skin. Here is a great video that will show you step by step how to do this.

I didn’t score the flesh of my cleaned Squid. Just simply cut it into pieces but it’s up to you. Pop the cleaned pieces into a bowl. Add a good dash of Olive Oil and using a zester add in a few scrapes of the Ruby Grapefruit zest. Set aside until required.

 

Next

Segment the Ruby Grapefruit. Here is a video to show you how and set aside.

Give the Mint leaves a good wash to remove any grit.

Pop a large frypan or grill plate on the stove. (yes this is a perfect BBQ dish too)

 

To Serve

Carefully add the prepared Squid to the super hot pan. Sear each side for a minute or two. It does not take long at all. It will go from being a little translucent to a whiter colour. Add a good amount of salt and pepper while it’s cooking too. Try not to over load the pan here as it will stew rather than quickly sear. Put the cooked Squid into a bowl large enough to tumble all ingredients around. 

Next add in the Ruby Grapefruit segments and Mint leaves and give a gentle mix about. (use tongs or put on plastic gloves – it will be a little warm)

Pile the salad onto your serving plates. Use a scraper to get the delicious juices from the bottom of the bowl and drizzle onto your salads. A little additional Sea Salt and Pepper is nice then finish with a spoonful of Ginger & Pink Peppercorn Flavour Pearls.

Add a large glass of something delicious and enjoy. This is definitely my favourite Summer Salad for 2022!
