Strawberry & Pomegranate Semifreddo Sandwiches

These Strawberry & Pomegranate Semifredo Sandwiches are fun to eat yet still a good looking dessert. Adding crushed Freeze Dried Strawberries into the Semifreddo with some of our Limited Edition Pomegranate Flavour Pearls make for some delicious flavour in every bite. 

Semifreddo is Italian for “half-cold” or “half frozen” It’s similar to ice cream but Semifreddo isn’t churned. It’s more like a frozen mousse. Semifreddo is often sliced to serve too rather than scooped like ice cream. It’s a great frozen dessert to make at home.

We used these terrific wafers from the supermarket (the size was good and they were crunchy, no particular flavour – just like an ice cream cone) but you could just as easily replace them with a cookie or biscuit if you prefer. The same goes for the Freeze Dried Strawberries and Pomegranate Flavour Pearls. You could try Freeze Dried Raspberries, Mango, Blueberries or Mandarin? What You’ll Need (serves 8)

 

Lets Get Started

Line a 21cm x 9cm lightly greased loaf tin with non-stick baking paper and glad wrap. Pop the layer of paper in first so you can easily lift out your frozen delight. Lightly greasing the tin will help it stick a little. Next a layer of glad wrap. Set aside until required. 

*Don’t forget to make sure you have room for the tin in your freezer!

Next

Place the eggs, extra yolk, vanilla and sugar in a heatproof bowl over a saucepan of gently simmering water (you don’t want the water to be touching the base of the bowl) and, using a hand-held electric mixer, beat for 5 minutes or until super thick and pale. Carefully remove the bowl from the heat and beat for a further 5 minutes or until cool. Whisk the cream until soft peaks form. Gently fold the cream through the egg mixture until just combined. 

*don’t mix this too vigorously or you’ll end up knocking all of the lovely air out of the mix.

Lightly crush up around 1 cup of Freeze Dried Strawberries and drain the liquid from your jar of Pomegranate Flavour Pearls.

Pour around 1/3 of the semifreddo mix into the tin. Sprinkle some crushed Strawberries and 1/2 of the Pomegranate Pearls onto the mix. Add another 1/3 then add more Strawberry and Pomegranate.  Add the last of the mix and any remaining delicious bits. Using a butter knife give the mix a little gentle swirl to distribute the flavours through. 

Freeze for 4–6 hours or until firm. Over night is great.

To Serve

Fill a tall jug with hot tap water and pop in a knife. Have a clean cloth nearby to wipe the blade between slices. A hot wet knife will make slicing this frozen delight much easier.

Lay out your wafers on the bench ready to get their slice of Semifreddo. 

Remove the frozen Semifreddo from the tin and put it onto a chopping board. Peel off the paper and glad wrap and carefully slice your Semifreddo into slices and pop them directly onto the wafers. Top with another wafer. 

We garnished ours with some additional crushed Freeze Dried Strawberries and Pomegranate Flavour Pearls

Now stand back and watch how quickly they get eaten!
