Tomato, Bacon and Basil Frittata with Balsamic Flavour Pearls

 Tomato, Bacon and Basil Frittata with Balsamic Flavour Pearls is a great dish for your next Brunch or Lunch. Perfect for a mid-week meal too. A simple one pan dish that is so full of flavour you will want to eat it all yourself!

Once the Frittata is in the oven you’ll have a few minutes to set the table before your guests arrive. The delicious aroma will have everyone’s mouth watering. Served hot, room temperature or cold. Add a simple Salad and crusty Bread to complete your meal.

What you’ll need – serves 4 – 6

  • Fry pan that can go into the oven 20 – 25cm (or a lined tin – just fry off the ingredients in a pan first)
  • 8 Eggs
  • 1/2 cup (125ml) Cream or Milk
  • 1/2 cup shredded Parmesan Cheese
  • Olive Oil
  • Salt & Pepper – lots
  • 1 small onion – diced
  • 1 clove Garlic – mince 
  • 6 – 8 short cut Bacon pieces – sliced
  • 1 teaspoon Thyme – chopped
  • Assorted Tomatoes – I bought a mixed tray from the supermarket
  • Basil – bunch
  • Fetta Cheese – we used Persian Fetta in Oil
  • Balsamic Flavour Pearls

To do

Set your oven to 180c. If you don’t have a frypan that can go in the oven please spray/oil and line a tin of a similar size.

Whisk the Eggs and Cream together in a bowl. Add the Parmesan and plenty of Salt & Pepper.

Next

Pop your frypan on the stove. Add a good splash of Olive oil. Swish it around so that it has coated up the sides of the pan too then add in the diced Onion, Garlic, Thyme and Bacon. Cook until a little colour is developing. Turn the heat down now if you’re putting the pan in the oven (if cooking in a tin – scrape all of the cooked ingredients into the lined tin now and spread out evenly)

Add in the Egg mix, gently scraping it around a little to start cooking the Eggs a bit. (Just pour into the tin) Add in tomatoes cut into 1/2’s and 1/4’s then pop it all into the Oven until just set and slightly puffing. Maybe around 10 minutes – just keep checking. **remember the handle of the pan will be super hot when you take it out**

To serve

Once your Frittata is out of the Oven just let it sit for a few minutes before turning it out. Run a spatula or knife around the edge first. I put a piece of baking paper on the top of the Frittata then top with a chopping board/plate/tray. Carefully flip it over. Lift off the pan or tray then place your serving plate onto the Frittata then flip it over again so the pretty side is facing up.

Add lots of fresh Basil leaves and blobs of Fetta to the top of the Frittata the add Balsamic Flavour Pearls to finish the dish. A simple Salad and some crusty Bread would be lovely too.
