Yoghurt Semifredo with Strawberry Flavour Pearls

A simple frozen dessert that looks fancy. Our Yoghurt Semifredo with Strawberry Flavour Pearls also has fresh Blood Plum wedges and a sprinkling of Strawberry Flavour Finisher for added texture. Yum!
Tangy and creamy it’s a fabulous dessert for warmer weather entertaining and you can have it prepared days in advance. 

What you’ll need – serves 6 – 8

  • 250ml Thickened Cream
  • 15g Sugar
  • 250g Greek Yoghurt – Natural or Vanilla
  • 150g Condensed Milk
  • Lemon Zest (finely grated) or Vanilla Bean Paste – 1/2 teaspoon
  • Muffin Tray and gladwrap (or plastic moulds)

Lets line the Muffin tray, ready for the mixture. Also make sure you have cleared space in the freezer for them! For the lining I tore aprox 20cm pieces of Glad Wrap and folded it in half (to a thicker squareish shape) so it was easier to handle. Then damp the tray with a little water (it will stick better) and press the Glad Wrap into each Muffin cup. Continue until you have lined 8. You may end up only filling 6 depending on the size though. You could certainly use a plastic mould if you have some handy but I didn’t this time so here we are!

Next

Combine the Cream and Sugar and whip until it has soft peaks. In another bowl whip the Yoghurt, Condensed Milk and Lemon zest or Vanilla for a couple of minutes until well combined and a little aerated. Fold the two whipped mixes together. Spoon the mixture into the lined moulds. I put a square of baking paper on top of each filled mould to cover the mixture before popping the tray into the freezer. Freeze for a minimum of 4 hours or until frozen solid.

To serve

The Semifredo will be rock hard by now so very easy to handle. I used a butter knife to help lift each dessert from the tray. Simply pop them out and remove the Glad Wrap from each and place them directly onto your serving plates. As they will be very solid you can take your time with the decoration so they will soften a little. Cut your Blood Plum into nice wedges and place one or two onto each dessert. Add a good spoonful of Strawberry Flavour Finisher and Strawberry Flavour Pearls onto each dish. They are ready to be enjoyed now but if you feel that they are still a little too frozen just allow them a few more minutes to semi soften before presenting to your guests. Enjoy.
