Christmas Pudding Ice-cream with Spiced Cranberry Flavour Pearls

Here’s our twist on a traditional Christmas Pudding. Christmas Pudding Ice-cream garnished with our delightful Spiced Cranberry Flavour Pearls. Yes I’ve brought out Grandma’s tea-set too. Then everybody gets to be at the dinner table! We’ve simply combined our favourite bought pudding with ice-cream and a little Brandy.

An ideal dessert for such a busy time of the year as it’s not tricky to prepare and you can have them ready in the freezer a couple of weeks before you need them. With Christmas day temperatures in Australia varying from 40c to a chilly 15c. A frozen dessert is just brilliant for a scorcher. 

We made individual portions but you could certainly make one larger pudding or use a loaf tin (easy to cut slices) if you wish to have a centre piece to serve at the table. Just be sure to remove it from the freezer 15 minutes earlier to allow it to soften a little first. Trying to cut into a frozen solid dessert with an audience isn’t much fun!

Many of our sweet Flavour Pearls would be just delicious to enjoy with this dessert if you don’t have Spiced Cranberry Flavour Pearls on hand. Try Salted Caramel, Strawberry, Golden Fig, Raspberry or Tangerine.

What you’ll need – we made 8 puddings

  • Christmas pudding – just buy what you like. Even a nice bit of fruit cake would be terrific – Aprox 450g
  • Vanilla Ice-cream – 2 litres
  • A splash of Brandy or Liquor of choice to taste (or not if you prefer)
  • Spiced Cranberry Flavour Pearls

*You will also need moulds and glad wrap to form either individual or one large pudding. We used the plastic moulds from some supermarket bought puddings that we had saved. A loaf tin would work well for a large pudding.

 

To do

Lets prepare the moulds first. Simply line each mould with a piece of glad-wrap large enough to be able to drape over the edges. It might be a little fiddly at this point but when you start spooning the mixture in the glad wrap will behave!

Next

Add slightly softened ice-cream into a mixing bowl and add in the broken up pudding. Using a paddle attachment (a whisk attachment may break) mix until well combined. Or you could go old school and use a wooden spoon and squish it together in a bowl. Adding a splash of Brandy to taste. Trust me you will want to keep tasting it…so delicious!

Simply spoon the mixture into the prepared pudding moulds. Fold the glad wrap sides over the top to completely seal the ice-cream. Pop them in the freezer until needed. 

To serve

Ensure your serving plates are cold. Pop the puddings out of their moulds and unwrap. Place them flat side down onto serving plates. Top with a generous spoonful of Spiced Cranberry Flavour Pearls and enjoy.
