Smoked Salmon Mousse with Tangerine Flavour Pearls

These pretty little bites are a cinch to whip up and look fabulous on the table. Delicious Smoked Salmon “Mousse” is perfectly complemented with Tangerine Flavour Pearls on a wedge of oven baked pita bread.

We’ve simply blended Smoked Salmon with Cream Cheese and a little seasoning. Not really a Mousse (it isn’t light and aerated)  but easier to describe it that way! You could easily create a vegetarian version using semi-dried Tomatoes or roast Capsicum instead of the Salmon. (yes you could certainly just buy a ‘dip’ that you already enjoy – they are generally thick enough to pipe onto a base)

What you’ll need

  • Cream Cheese – generally a 200 – 250g packet
  • Smoked Salmon – we used a 100g packet of whatever was on special. Add more if you want a stronger flavour. 
  • Lemon – for a little zest and juice
  • Sea Salt & Ground Pepper
  • Dill
  • Pita bread – we bought a packet of the smaller size Pitas
  • Olive Oil
  • Tangerine Flavour Pearls

 

To do

Lets get the Pita bread sorted first. Pop your oven on to 180c.

Brush each of your Pita bread with a little Olive oil. Next cut them into 6 – 8 wedges – just a nice size for a canape. Place them onto a baking tray. Sprinkle with some Salt & Pepper when on the tray (less mess this way!)

Bake until lightly golden and crisped. Perhaps 8 – 10 minutes. Just keep checking 🙂

Let them cool on the tray. You can store these in an airtight container for use up to a week later.

You will need a blender for this bit.

Dice the Cream Cheese and pop it into the blender with the Smoked Salmon. Blitz until smooth. Add a little Lemon zest (use a microplane or fine grater) and juice to taste. Also Salt and Pepper. A little of your Dill would also be delicious. Pick the pretty fronds for your garnish first and set them aside. Roughly chop before adding in.

You can store this in the fridge until required. Will keep well for days.

To serve

Put the Salmon mixture into a piping bag. You can buy disposable ones these day so no washing up. Also ideal if you want to serve this dish at someone’s house or a picnic. Easy to transport and no messy fingers either!

Simply pipe a nice portion on to each Pita crisp. Place them onto your serving platter. Add a couple of Tangerine Flavour Pearls and lastly a little sprig of Dill.

Now pour the Bubbly and lets celebrate 🥂
