Grilled Chicken and Vegetables with Mango & Chipotle Flavour Pearls

This juicy Grilled Chicken and Vegetables with Mango & Chipotle Flavour Pearls dish is so full of flavour and simple to prepare that you will definitely make it more than once. A great one for the BBQ. Chicken Breasts are simply sliced and rubbed with a fragrant herb and spice oil. The vegetables all sliced, lightly seasoned and oiled then the whole lot is grilled until just cooked. Add a little Rocket, some Aoli (or mayo) and finished with our Limited Edition Mango & Chipotle Flavour Pearls

What you’ll need

  • Chicken Breasts – no skin – allow 150/200g per person
  • Olive Oil
  • Chipotle Powder – 1 tsp to 1 tbs (to taste)
  • Parsley – wash and chop 
  • Coriander – wash and chop 
  • Garlic clove – crush
  • Salt & Pepper
  • Sweet Potato – peel and slice 1/2 cm thick
  • Zucchini – slice 1/2 cm thick
  • Red Onion – peel and cut into wedges
  • Rocket – washed (or other leafy green)
  • Aioli or Mayonnaise –  a generous spoonful per portion
  • Mango & Chipotle Flavour Pearls

To do

Lets prepare the vegetables first, less knife and chopping board washing then! Wash and or peel the vegetables and slice into approximately 1/2 cm slices. The Onion into wedges of a similar width. Put them into a bowl large enough to gently mix them with enough Olive Oil to lightly coat them and add some Salt and Pepper.

*if you keep the onion root intact minus the actual roots when peeling, the wedges will stay together when you cut them so easier to cook and they look nice too*

Next

For the Chicken – Slice the breasts so that instead of one larger piece you will have 2 – 3 thinner slices. Aprox 1 cm thick. They will cook a little faster this way and still be juicy. Add the crushed Garlic and chopped herbs to a good lug of Olive oil. Add 1/2 to 1 teaspoon of Chipotle Powder to the mix too. Pop the Chicken in and coat well with the delicious ‘marinade’.

*These can be popped into the fridge and cooked hours later or the following day*

Heat the BBQ or grill plate until nice and hot. Veggies on first please. When they have a nice colour on one side it’s time to turn them and add the Chicken to the grill. A little Salt and Pepper on the Chicken here too please. Grill until the vegies are tender and the Chicken just cooked. Yes just poke the veg with a fork and cut into the Chicken if you’re not confident.

To serve

Add a small handful of Rocket (lightly dressed if you have some handy) to each plate then a nice mix of the grilled veg. Add a couple of pieces of the juicy cooked Chicken. Top with a spoonful of creamy Aioli and our Limited Edition Mango & Chipotle Flavour Pearls and enjoy.
