Pear Tarts with Salted Caramel Flavour Pearls

Freshly baked Pastry is definitely up there in my sweet treats favourites list. Pear Tarts with Salted Caramel Flavour Pearls is an impressive pastry yet surprisingly easy to prepare. Really I promise! Ripe Pears and good quality Butter Puff Pastry are the main ingredients and of course some thick Cream and Salted Caramel Flavour Pearls to finish it off. 

What you’ll need

  • 375g pkt Careme Butter Puff Pastry
  • 1 Egg yolk – mix with a dash of water to glaze
  • 4 Pears – ripe. You could use tinned halves if no ripe available
  • 8 tsp Sugar – we used Demerara (1 spoon per tart)
  • Cinnamon – to taste
  • Double Cream – 1 tsp per tart plus extra to serve
  • Icing Sugar to dust
  • Salted Caramel Flavour Pearls

To do

Pop your oven on to 200c. Take the pastry out of the freezer. It needs to be very cold to work with but not frozen. It tends to soften quite quickly.

Meanwhile you can get the Pears ready. It’s important that the Pears are ripe – they won’t cook for long enough to soften if not. You can use tin Pear halves if no ripe are available. Simply peel the pears and cut in half. De-seed them too please. 

Next

Unroll the defrosted Pastry. Cut into squares/rectangles that are aprox 2cm larger than your Pear halves. Cut as per images below. Brush with Egg wash before you fold the cut edges across. Place them on to a tray lined with baking paper.

Slice the Pear halves so that they will fan out on the pastry. Simply place the Pear onto the Pastry so that it looks nice. If it’s too big just take the Pear off and make it smaller! Add a teaspoonful of Double Cream to the top of each Pear. A sprinkle of Cinnamon. A generous spoonful of Demerara Sugar (Raw would also be so fine) and put them in the oven. 

They are ready when they are golden in colour and the Pastry is risen. 15 to 25 minutes – depending on your oven.

To serve

Simply dust the golden pastries with some Icing Sugar while they are still on the tray. (less messy that way) Using a lifter/spatula carefully place the pastries onto serving plates. Add a liberal spoonful of Cream and some Salted Caramel Flavour Pearls to finish. Yum…now try eating only one!
