Sweet Potato Fritter, Smoked Chicken and Pepperberry & Cherry Flavour Pearls

For a delicious two bite delight you can’t go past our Sweet Potato Fritter, Smoked Chicken and Pepperberry & Cherry Flavour Pearls recipe. A nice dollop of Avocado and some finely chopped spring onions with our wonderful Australian Bush Pepperberry & Cherry Flavour Pearls create a visual feast as well as a delicious one! An easy recipe to to adapt too. Vegetarians can just leave out the Smoked Chicken or add something else. Use gluten free flour for our Coeliac friends.  It’s also easy to make slightly larger fritters for an entrée or light lunch serve. 

What you’ll need

  • Sweet Potato – one medium to large should make around 10 pieces
  • 1 Egg
  • Flour – handful
  • Salt & Pepper
  • Cumin Powder – a generous teaspoon
  • Spring Onion – finely slice
  • Olive Oil
  • Smoked Chicken Breast
  • Avocado – ripe
  • Pepperberry & Cherry Flavour Pearls

To do

Lets get the fritters sorted first.  Simply peel and grate the sweet potato into a bowl. Add the cumin powder, lots of salt & pepper and around a 1/4 cup of chopped spring onion. Add the egg and then a good handful of flour. The egg should coat all of the sweet potato and the flour just adds a little ‘glue’ to bind it together.  If it seems too wet just add a little more flour. The mix should be wet enough that you can form a small patty.

Next

Pre-heat your oven to 180c. Heat a large fry pan and add a splash of olive oil. When the pan is warm enough to sizzle a little when something is added place large tablespoon sized ‘patties’ in. Once nicely coloured carefully turn them over and brown the other side. Once both sides are browned place them onto a baking tray and bake for around 10 minutes to ensure that the sweet potato is cooked properly.

*These can be made the day before if you want to get organized*

To serve

Thinly slice the smoked chicken breast. Mash or puree the avocado with a little salt & pepper. Simply place the cooled fritters onto a serving platter, add a slice of smoked chicken, a little avocado and finish with some Pepperberry & Cherry Flavour Pearls and a sprinkling of spring onion. Yum!
