Wonton Cups with Avocado Salsa and Ginger, Lime & Chilli Flavour Pearls are a quick and tasty canape to prepare. Avocadoes have been so good lately I couldn’t resist! I love a mini tart shell but they aren’t always available when I need them last minute, so I made my own. I simply trimmed off the corners of the Wonton wrappers (they are a little sharp when baked) and baked them in a mini muffin tray until crisp. No dough making or blind baking required! You could take more off the edges to make a more round shape if you felt so inclined. The Ginger, Lime & Chilli Flavour Pearls add such a lovely flavour hit 🌶️

What you’ll need

  • Mini Muffin Tray
  • Wonton Wrappers
  • Avocado – firm but ripe
  • Tomato – dice
  • Spanish Onion – dice
  • Red Capsicum – dice
  • Coriander – chopped plus leaves to garnish
  • Lime
  • Sriracha Chilli Sauce
  • Salt & Pepper
  • Ginger, Lime & Chilli Flavour Pearls

 

To do

Pre-heat your oven to 180c

Give the Mini Muffin tray a good spray with oil. Carefully press the Wonton wrappers into each space. I used a fat wooden spoon handle to press the base in so that I didn’t poke holes with my fingernails! Bake for 10 or so minutes until they are golden brown. Let them cool for a few minutes before taking from the tray.

*this can be done a day or so ahead and kept in an airtight container if you wish*

Next

Peel and dice the Avocado. Pop it into a bowl. Add in some diced Tomato, Red Onion and Capsicum. Not too much as you still want the Avocado to be the hero ingredient, these will add a little more texture and colour to the dish. Pop in some washed and chopped Coriander and season well. Add a good squeeze of Lime juice and Sriracha. Very gently combine with a spoon. 

To serve

Simply add a spoonful of your Avocado Salsa to each Wonton Cup. Place onto your serving platter. Add a Coriander leaf to each and some Ginger, Lime & Chilli Flavour Pearls to finish. Enjoy!
