Roast Cherry Tomatoes, Whipped Fetta and Balsamic Flavour Pearls
Roast Cherry Tomatoes, Whipped Fetta and Balsamic Flavour Pearls – a fabulous dish to enjoy with your friends and family this Summer. A simple recipe with few ingredients and quick to prepare. Lazy days call for quick and delicous eats! While Tomatoes are plentiful and delicious it’s wonderful to enjoy them served in a different way. Oven roasted with Herbs, Garlic and Olive Oil. Spread lusciously creamy whipped Fetta onto grilled Sour Dough, top with some roast Tomatoes and a pop or two of Balsamic Flavour Pearls. Yes please!
What you’ll need
- Cherry tomatoes – allow 6 – 8 per person
- Garlic cloves – a couple, just bruised and peeled (you can get the flavour then pick them out before eating)
- Olive Oil
- Herbs – we used Thyme & Rosemary as that was all we had in the garden
- Sea Salt & Pepper
- Fetta – 2 parts Fetta
- Ricotta – 1 part Ricotta
- Sour Dough – sliced
- Balsamic Flavour Pearls
To do
Set your oven to 180c. Pop your Tomatoes onto a tray/dish or fry pan (single layer). Add a generous lug of your favourite Olive Oil, the bruised Garlic and Herbs of your choice. Season well and bake for around half an hour or until they start softening and getting a little colour. Pick out the Garlic cloves before serving.
Next
While the Tomatoes are roasting lets get the whipped Fetta and Sour Dough sorted. I’ve added a little Ricotta to this mix as I find all Fetta can be a little strong. Feel free to use all Fetta if you prefer. Simply put the Fetta and Ricotta into a food processor with a dash of Olive Oil. Blend well. Add a little water to thin it down to a nice dip like consistency. Season well.
Brush the sliced Sour Dough with Olive Oil and char grill/bbq to get some nice grill marks and smoky flavour.
To serve
Add a spoonful of whipped Fetta onto each plate, top with some roast Cherry Tomatoes and a good drizzle of the tomatoey Olive Oil. A sprinkle of Sea Salt & Pepper. Pop the grilled Sour Dough on the side and finish the dish with some Balsamic Flavour Pearls.
