Feta and Filo with Chilli Honey Flavour Pearls
Buttery crisp Filo pastry filled with tangy Feta Cheese. All topped off with sweet and spicy Chilli Honey Flavour Pearls. Yum! Ideal to enjoy as a light meal or share platter for a party. The pastries can be prepared the day prior and baked just before serving. I used a creamy Danish Feta as that’s what I had in the fridge but just use what you enjoy. There are many Feta varieties available!
What you’ll need
- 1 packet Filo Pastry (aprox 18 sheets) – defrosted
- Butter – aprox 1 cup melted
- 200g Feta Cheese – or you could cetainly use soft Goats Cheese or a Feta and Ricotta combination
- Salt & Pepper
- Dukkah
- Rocket leaves and a little dressing (or not)
- Chilli Honey Flavour Pearls
*You will need a Pastry Brush for this recipe*
To do
Remove the Filo from the freezer and allow to defrost. Pop your oven on to 180c. Cut or crumble your Feta into aprox 18 pieces (you will be adding a generous teaspoon per Pastry). Melt the Butter. Line a tray or two with Baking Paper.
Next
Take one sheet of Filo at a time. Brush with Butter. Fold in half lengthways so you end up with a long thinner rectangle. Watch this video if you’re unsure Place some Feta at the end of the Pastry (a generous teaspoon) season with a little Salt & Pepper and fold to make a triangle that covers the Feta. Keep folding until you get to the end of the Pastry. Butter the last edge so that it will stick together. I like to brush the top with a little more Butter too. Place them onto the tray ready for the oven or into a container separating them with Baking Paper ready for tomorrow.
To serve
Pop the trays of Pastries into the pre-heated oven for around 15 minutes or until the Pastry is golden and puffed up. Sprinkle with a little Dukkah while they’re hot so it will stick. Pile them onto some dressed Rocket and finish with some Chilli Honey Flavour Pearls before serving. I cut a couple in half and loaded my Pearls onto the cut side. YUM!
