
Fresh Figs are a delight that we enjoy for a short time each year.
We have created a simple dish that can be enjoyed by one or many when fresh figs are available. Candied prosciutto gives a lovely crunch to our dish and is an absolute delight that you may have never tried before…I bet it won’t be the last! It’s like grown up candy! The creamy cheese is set off beautifully with the addition of Honey Flavour Pearls.
What you’ll need – 2 servings
- 3 – 4 ripe figs
- 2 – 3 slices of prosciutto or jamon
- brown sugar
- marinated goats cheese or fetta in oil (ours was from a local maker)
- watercress or other greens eg: rocket or spinach – picked and washed
- vinegar – a splash of the best that you have
- sea salt & black pepper
- Honey Flavour Pearls
To do…
The only preparation here is for the candied prosciutto which is pretty quick. Pre-heat your oven to 180c. Take a baking tray and line it with baking paper. Lay your prosciutto slices on to the tray. Sprinkle a fine layer of brown sugar across each slice. Use your finger to spread it out evenly. More is not better in this case! Pop the tray in the oven for around 10 minutes. What we want is for the sugar to melt and caramelize…not burn so keep an eye on it. It is ready when the sugar starts to get a few darker patches on it. Allow it to cool on the tray.
When it’s time to serve
Just grab your serving plate and start with a handful of greens, dressed with a bare splash of your best vinegar and a little of the oil from your marinated cheese (or any dressing that you may already have). Don’t forget to season with a little salt and pepper. Next add a piece or two of goats cheese, your candied prosciutto and sliced fresh figs. Top with a generous spoon of Honey Flavour Pearls to finish.
A crisp dry white and a spot to enjoy in the sunshine is all you need now 🙂
