Chickpea and Zucchini Fritters with Mango and Chipotle Flavour Pearls
These bite-sized Chickpea and Zucchini Fritters with our Limited Edition Mango & Chipotle Flavour Pearls are just divine. A delightful warm vegetarian canape that’s even kinda healthy. Feel free to substitute the Zucchini for another vegetable if you prefer. Lightly steamed and chopped Broccoli or Peas would be lovely if you have them in the fridge already.
What you’ll need
- Chickpeas – one 400g tin, drained
- 1.5 cups grated Zucchini or vegetable of your choice
- Onion – one small, grated (squeeze out the liquid)
- Garlic – one clove crushed
- Salt & Pepper
- Cumin ground – 1 tablespoon
- Coriander ground – 1 tablespoon
- 1 egg
- Flour or bread crumbs – around 1/4 cup
- Coriander – 1/4 cup washed and chopped
- Olive oil
- Sour Cream
- Mango & Chipotle Flavour Pearls
To do
Mash the drained Chickpeas with a fork or masher until broken down but still lumpy. Add the Zucchini, Onion, Garlic, Cumin & Coriander powders and mix and season well. Have a taste. It needs to be really well seasoned. Add the Egg, chopped Coriander and enough Breadcrumbs or Flour to firm up the mix.
Next
Form generous tablespoonful scoops into nice little fritters/patties. Place them onto a tray or plate ready to brown off. Heat a large frypan with a dash of Olive Oil. Brown them on both sides. Use a lifter or spatula so you don’t squish them.
*you can prepare up to this point and re-heat them in the oven to serve later or the next day if you like*
To serve
Simply add a small dollop of Sour Cream and a Coriander leaf to each fritter. Place them onto a serving plate. Add a few Mango & Chipotle Flavour Pearls to complete the dish.
