Kingfish Crudo, Chipotle Dust, Green Chilli and Golden Pineapple Flavour Pearls

Kingfish Crudo with a sprinkle of Chipotle dust and the lively zing of some fresh green Chilli and our Limited Edition Golden Pineapple Flavour Pearls is an absolute winner of a dish for Sashimi lovers. It can be on the plate in literally minutes too! We’ve added a little finely sliced Shallot and diced Cucumber for crunch. Kingfish has a delicate sweet flavour which I adore, but by all means if the sashimi grade fish available on the day is something else please use that. 

What you’ll need

  • Sashimi grade Fish, allow approx. 100g per person – we used Hiramasa Kingfish
  • Long Green Chilli 
  • Shallot
  • Cucumber
  • Lemon zest (optional)
  • Chipotle Powder
  • Extra Virgin Olive Oil
  • Sea Salt Flakes
  • Golden Pineapple Flavour Pearls

 

To do

Lets prepare the vegetables first. Very finely slice the Green Chilli (pick or cut out the seeds from each slice) as well as the Shallot. Dice the Cucumber too. If using Lemon zest get this ready now. I used a zester but micro-plane or the fine side on a grater works too. 

Next

Carefully slice off the bloodline on your beautiful piece of fish if it needs it. Using a sharp and clean knife, slice the Fish into approx. 3mm slices. At this stage all the prep is done so it can be refrigerated until required.

To serve

Lay your beautiful Fish slices onto plates. Top each slice with a little sliced Shallot and Green Chilli. Scatter some of the diced Cucumber on and around the Fish. Pour a tablespoonful of Extra-Virgin Olive Oil onto a spoon and drizzle across the dish. Sprinkle on the Chipotle powder and Sea Salt. Add the Lemon zest. Lastly complete the dish with some Golden Pineapple Flavour Pearls on each slice of Fish and even a little drizzle of the juice too.
