 Avocado Salad with Blood Orange Flavour Pearls

Feel free to adapt and add different ingredients…we wanted to add some gorgeous shaved fennel to ours but they looked a little dry at the shop that day so changed our plan. Go with what you love and looks fresh.

What you’ll need – 4 servings or 1 share plate

  • Avocado – 1 large or 2 small
  • ¼ red onion
  • 2 or 3 radish
  • Rocket leaves, watercress  or another leafy green – a generous handful washed
  • ¼ cup fresh washed coriander leaves
  • Olive oil – extra virgin
  • Salt & Pepper
  • Blood Orange Flavour Pearls

To do…

We built our salad directly onto the serving platter. Firstly combine your greens and coriander leaves and place onto the plate. Using a mandolin or sharp knife, slice the radish and red onion very thinly. Next to peel and slice the avocado.  Then just nestle and tuck in your sliced goodies to look its best amongst the greens.

When it’s time to serve

Simply top your salad with a drizzle of extra virgin olive oil, a sprinkle of salt and pepper and finish with Blood Orange Flavour Pearls

(A little of the juice from the Pearls is nice to add too)
