Halloumi Skewers with Tomato Salad and Yuzu Flavour Pearls is a fresh, light and absolutely delicious meal that could easily be made into a larger share platter or even a mini cocktail size portion depending on your needs. All components can be prepared well ahead of time too so no rushing about at the last minute. Just the grilling of the Halloumi skewers so they’re hot and melty. The Tomato salad is my version of a Fattoush salad with delicious rustic Turkish Bread croutons throughout. It’s a great BBQ recipe for a non-meat meal.

What you’ll need – I haven’t added quantities just adjust volume according to guests

  • Halloumi Cheese – I used this one, just bought at Woolies
  • Skewers
  • Olive Oil
  • Tomatoes – I had a variety of different types, just use what looks the best when you’re shopping
  • Roast Red Capsicum – I bought a small tub from the deli
  • Celery stalks
  • Spring Onion
  • Mint
  • Parsley
  • Turkish Bread
  • Tomato Juice 
  • Salt & Pepper
  • Sumac
  • Yuzu Flavour Pearls

To do

Lets get the croutons ready first. – set your oven to 180c. Roughly tear or chop your Turkish bread into bite sized pieces. Pop them onto an oven tray. Drizzle with a little Olive Oil and season well. Bake until lightly golden and crisp. Likely around 10 minutes – just keep checking after around 5 minutes. 

Once they have cooled completely they can be stored in an airtight container for a few days. They are always nicer on the day they are made though…try not to eat too many before your guests arrive 🙂

Next

Now for the skewers. Simply dice your block of Halloumi into even cubes and thread onto skewers. They need to be reasonably even in size so that they will cook evenly. Two skewers per person should suffice. If you don’t feel like dicing and skewering a couple of slices each is also great. Pop them in the fridge until needed.

For the salad. Simply cut your Tomatoes into 1/2’s or wedges. Slice or tear the roast Capsicum into strips. Finely slice the Celery. Chop the Spring onion. Wash and roughly chop the Mint and Parsley. Pop them all into a large bowl (or large plastic container if you’re prepping for later). Add a splosh of Olive Oil. Also a splosh of Tomato Juice. A generous amount of Salt and Pepper and the toasted croutons. 

If you are serving this later please don’t mix it all together yet. Leaving all of the ingredients layered up will keep them from getting squishy. 

To serve

Heat up the BBQ , fry pan or grill plate. Add a little olive oil. Pop the skewers on. They just need to become nicely coloured all over. 

While they are cooking. Give the salad a thorough but gentle mix with your hand. Add a handful onto each plate. Once the skewers are nicely browned add them to the plate. Give a little sprinkle of Sumac over everything. And lastly a generous spoonful of our delightfully citrussy Yuzu Flavour Pearls

Best served immediately while the Cheese is still warm.
